Applications — Food & Beverage

Every dish starts with water. Make it a spec, not a shrug.

Doughs, stocks, sodas, espresso, ice — each wants different water, and every location gets a different municipal hand. The platform turns water into a controlled ingredient with a number attached.

The challenge

Where this application goes wrong today.

Location roulette

The same recipe behaves differently across sites because the water underneath it differs. Consistency programs stop at the tap.

Everything wants different water

Espresso, bread, and a clear ice program each have their own ideal composition. One municipal feed serves none of them well.

No numbers, no control

Kitchens measure everything except the most-used ingredient. When a batch goes sideways, water isn't even on the checklist.

The fix

Dose. Verify. Log. Repeat — identically.

From one RO baseline, the platform doses to the composition each station needs — measured against live flow, verified by conductivity, switchable per use. A recipe's water becomes part of the recipe card, reproducible at any location that runs the same setting.

  • Per-station targets — an espresso setting, a dough setting, a service-water setting — selected as needed.
  • Cross-location consistency — same setting, same measured water, in every kitchen you operate.
  • Live verification — conductivity confirms the water leaving the line matches the target on the card.
  • Instant pure-water draw — dosing off means unmodified RO for rinsing and delicate work.
  • Event records — settings and dosing activity logged — useful when a location claims 'nothing changed.'

The chemistry

Composition as a recipe card.

Culinary water wants ranges, not mysteries: mineralization for flavor and fermentation, restrained hardness for equipment, neutral profiles for delicate applications. We supply destination-appropriate mineral concentrates from our catalog, qualify one you already use, or develop a house profile with your culinary team — then hold it, measurably, at every tap you connect.

Concentrates are qualified for food-contact water destinations. Menu outcomes and local plumbing-code compliance remain with the operator.

Common questions

We run twelve locations. How does this help?

The setting is the standard. Each site doses from its own local water to the same measured target, so the dough in Austin and the dough in Denver ferment on the same baseline. Rollouts run through our commercial pilot program, one flagship site first.

What does installation look like?

Downstream of your existing filtration or RO, inline on the water lines you choose to finish. Sizing to your fixture count and draw pattern happens during scoping.

Can bar and kitchen run different water?

Yes — dosing is per-line. A soda program's water and a stockpot's water can be different settings from the same platform.
